ingredients:
- 1 1/2 cups milk
- 2 eggs
- 2 cups flour
- 1/4 cup vegetable oil
- 3 tbsp sugar
- 1 tsp salt
- vanilla extract
- 4 tsp baking powder
- 1/2 tsp baking soda
whisk dry ingredients together in a large bowl. whisk eggs and oil til combined, then whisk milk and vanilla into the egg and oil mixture.
add the wet ingredients to the dry ingredients and mix til just combined, should still remain somewhat lumpy. let batter proof for 10 minutes on counter.
heat oil or butter in a pan then wipe out with paper towel leaving a thin film on the pan. add batter to skillet using 1/4 measuring cup. cook til bubbles on surface are breaking, then flip. cook another 1-2 minutes.
serve.
