- punnet of cherry tomatoes
- pasta of your choice
- shallot
- garlic
- parmiaganno regianno or pecorino romano
shallow fry thinly sliced garlic and diced shallot in olive oil til translucent and fragrant. add cherry tomatoes then salt, pepper, chilli flakes, and a little sugar to taste to pot. reduce heat and cover lid. at this point is probably a good idea to start the pasta, where you should reduce the cooking time suggested on the package by 1/4.
after 8-10 minutes stir in cold butter and cooked pasta to create a cohesive sauce. top with grated parmiaganno regianno or pecorino romano.
