ingredients:
- 500g beef mince
- 450g frozen mixed vegetables
- 200g tin of bamboo shoots
- 200g tin of brown lentils
- curry powder
- 1 cup stock beef stock
- 2 onions
saute onions in an oiled frying pan til cooked, then add the mince and cook until browned, breaking up with a spoon while cooking. once brown, add in curry powder and 2 cups of water, and mix. once simmering add in vegetables, drained and rinsed lentils, bamboo shoots, and stock. cook til vegetables are cooked through.
serve over rice.
